All about dipping …

If you are someone like me, there will inevitably come a day when you get the urge to create a new dip. Because dipping is cool. Dipping is a way of eating which is informal, creative and convenient.


I am a committed dipper.


Which is why I would love to share this little dipping masterpiece with you. Behold - a whipped feta dip.


This baby takes 15 min to make and will wow even the most discerning dip aficionados. I promise you - once they see it they will swoon and once they try it they will love you forever.


Making it is a proverbial piece of cake.


You will need:


- a can of chickpeas

- a box of good quality cherry tomatoes

- olive oil

- a pack of proper feta cheese

- a large dollop of cream cheese or Ricotta

- half a pot of natural yoghurt

- honey

- half a lemon

- zataar (or oregano if you can’t be bothered sourcing zataar)

- fresh basil leaves


Process:


1) roast your chickpeas and tomatoes with a LOT of olive oil at 180 degrees for 15 min


2) in the meantime, whip up your dairy products in a blender until smooth. Add lemon juice and a good tablespoon of honey

3) when roasting is finished, allow the chickpeas to cool down (trust me, plating this too early results in some intriguing melting by products which you definitely don’t want)


4) once cool, plate that bad boy. Cheese mix at the bottom, tomatoes and chickpeas in the middle, drizzle with Olive oil and honey and finally sprinkle with zataar.


5) consume and dont blame me if you eat the whole thing in one go and realise you just absorbed 10k calories in a single sitting. Totally worth it anyway.
